Huckleberry Finn: Perfect Pulled Pork Sandwiches

"I hadn’t had a bite to eat since yesterday, so Jim he got out some corn-dodgers and buttermilk, and pork and cabbage and greens—there ain’t nothing in the world so good when it’s cooked right—and whilst I eat my supper we talked and had a good time."

Mark Twain, Huckleberry Finn Chapter 18

My baby is learning his animal sounds, but according to him, everything growls---including ducks, bunnies, and goldfish.  We've tried to explain that the growl is only for lions, tigers and bears (oh my!), but the point doesn't seem to be sticking, as evidenced by his gutteral growl at a passing butterfly this week.

Animal awareness has always been a tricky subject around here--and not just the part about learning how to "moo" or "baa" or "oink."

I remember having to explain to my oldest son where his hamburger had come from.

"The meat in your hamburger comes from cows," I explained as cheerfully as possible, as though the slaughterhouse were just a lesser-known corner of Frontier Land at a Disney park.

My son thought for a moment and then looked at me with horrified green eyes that were beginning to fill with tears.

"You mean we kill cows and EAT them?"
For the first time in my life, I wished I were a card-carrying member of PETA so I could assure my son that even though SOME people killed cows and ate them, WE didn't.  We weren't that cruel.
But I couldn't.  I think it had something to do with obvious flaw in logic considering all the In-'N'-Out wrappers on the car floor.
So I did the next best thing.  I lied.
"Yes, honey.  We eat animals for their meat . . . But ONLY the mean ones."
Reason # 37, 801 why I am on heaven's "wait list".

What I WON'T lie about to you is that these pulled pork sandwiches are my absolute favorite.  Not only are they a breeze to make, but they are the perfect mouth-watering blend of sweet and savory "can-I-have-another-one?" yumminess.

Pair these with your favorite BBQ sauce and you have a sure hit.  Just be sure to use "Mean Pork" in your recipe, and not the "NICE" kind.
My son will sleep better knowing you did . . .

Perfect Pulled Pork Sandwiches

Pull apart with a fork and serve on rolls.

  1. How in the heck do you girls find time to do all of this ridiculously cute stuff?!? You two are close in age aren't ya? I wish I had a sister who was 3 years older or younger than me to do this fun stuff with. My next older sister is 6 years, a huge gap in siblinghood. Keep it up!

  2. Yum! My hubby has been smoking pork on the Traeger for our pulled pork sandwiches but come winter this will be my go-to recipe for sure. And LOL about the slaughterhouse being "a lesser-known corner of Frontier land at Disney Park"!!! :-)
